Custard Apple Post-Harvest Handling and Storage: Reducing Losses and Maximising Income

Post-harvest loss assessment studies conducted by ICAR and the Central Institute of Post-Harvest Engineering and Technology estimate that 25 to 35 percent of total custard apple production in India is lost between farm harvest and final consumer purchase due to bruising during transport, premature ripening triggered by ethylene accumulation, and inadequate packaging that causes physical damage and moisture loss. For a farmer producing 5,000 kg per acre, this represents a direct income loss of ₹37,500 to ₹52,500 per season at ₹30 per kg farm gate price. Research from CIPHET Ludhiana and IIHR Bangalore has identified practical and low-cost post-harvest management interventions that reduce these losses to below 10 percent without requiring expensive cold chain infrastructure.

Correct Harvest Maturity Identification

Research from IIHR Bangalore establishes that harvesting custard apple at the correct maturity stage is the single most important factor determining post-harvest life and market quality. Custard apple must be harvested at the mature green stage before the onset of ripening, when the fruit skin colour changes from dark green to light yellowish green and the spaces between individual carpel segments begin to widen slightly. IIHR research documents that fruits harvested at this mature green stage have a post-harvest life of 4 to 6 days at ambient temperature of 25 to 30 degrees Celsius, compared to only 1 to 2 days for fruits harvested after ripening has already begun on the tree. A simple maturity test recommended by IIHR involves pressing the fruit gently between the palms. Mature fruit gives very slight resistance to pressure while still feeling firm. Immature fruit feels hard and does not give at all. Overripe fruit on the tree feels soft and the segments begin to separate visibly.

Harvesting Methods to Prevent Bruising

CIPHET research identifies bruising during harvesting as the primary cause of accelerated post-harvest deterioration in custard apple. The thin skin and soft internal structure of custard apple make it highly susceptible to impact bruising that is invisible externally but causes rapid internal browning and decay. Research recommends harvesting by hand with a gentle twisting motion rather than pulling, using a harvesting hook or pruning knife to cut the fruit stalk leaving a 1 to 2 cm stalk attached to the fruit, which slows the entry of post-harvest pathogens. Harvested fruits must be placed immediately into padded containers lined with newspaper, dry grass, or foam padding and never allowed to drop from height or be stacked more than 2 to 3 layers deep. CIPHET trials show that replacing traditional wire mesh crates with padded wooden boxes during harvest reduces bruising related losses by 45 to 55 percent.

Pre-Cooling and Shade Storage Immediately After Harvest

Research from the Postharvest Technology Centre at IARI New Delhi documents that field heat accumulated in custard apple fruit during daytime harvesting significantly accelerates respiration rate and ethylene production, shortening post-harvest life. Harvesting in the early morning hours between 6 AM and 9 AM before peak daytime temperatures reduces initial fruit temperature by 4 to 6 degrees Celsius compared to afternoon harvesting and extends post-harvest life by 12 to 18 hours in IARI trials. Immediately after harvest, fruits should be moved to a shaded, well-ventilated location and never left in direct sunlight. Evaporative cool chambers constructed from brick, sand, and gunny bags maintain internal temperatures of 15 to 18 degrees Celsius at ambient temperatures of 35 to 40 degrees Celsius and have been shown by IARI research to extend custard apple shelf life to 8 to 10 days at a construction cost of approximately ₹3,000 to ₹5,000 per unit.

Grading and Packaging for Market

NHB grading standards for custard apple divide fruit into three commercial grades based on weight. Grade A fruits above 300 grams with uniform shape, clean unblemished skin, and no cracks or insect damage command the highest market prices and are suitable for supermarket and export channels. Grade B fruits between 150 and 300 grams with minor surface blemishes are sold through urban retail and mandi channels. Grade C fruits below 150 grams or with significant external defects are sold at lower prices to local markets or processing units. Research from Maharashtra agricultural universities recommends packaging Grade A custard apple in corrugated fibreboard cartons of 3 to 5 kg capacity with each fruit individually wrapped in tissue paper or foam net sleeves to prevent contact bruising during transport. Studies show that individual fruit wrapping reduces transit damage by 60 to 70 percent compared to unwrapped bulk packing in the same carton.

Cold Storage Options for Extending Shelf Life

Research from CIPHET and NHB documents that custard apple stored at 15 to 17 degrees Celsius with 85 to 90 percent relative humidity maintains marketable quality for 20 to 28 days, compared to 4 to 6 days at ambient temperature. Storage below 12 degrees Celsius causes chilling injury, producing skin browning and off-flavours that make fruit unmarketable. Most government-operated cold stores maintain temperatures of 0 to 5 degrees Celsius optimised for potato and onion storage and are therefore unsuitable for custard apple. NHB has been promoting the establishment of specialised horticultural cold rooms at 15 degrees Celsius in major custard apple growing clusters of Nashik, Nanded, Kurnool, and Chittoor districts under central government horticulture infrastructure schemes that provide 35 to 50 percent capital subsidy for cold storage construction, making farmer group investment in dedicated custard apple cold rooms increasingly viable.

Practical tip: Never mix ripe and unripe custard apple fruits in the same storage container or transport box. Ripe custard apple releases ethylene gas at a very high rate that rapidly triggers ripening in neighbouring mature green fruits, cutting their post-harvest life from 5 to 6 days down to 1 to 2 days. Sort every batch strictly at harvest, keep mature green fruits together for market transport, and sell or consume any fruits that have already begun softening immediately rather than storing them with the main marketable batch. This simple sorting discipline alone can reduce post-harvest losses by 15 to 20 percent.
